Leak and Beef Stew

 
Last night we had a dinner with Sharon. Shinho and I really enjoyed the evening. I didn't post the menu, because everything was already in the past blog. Shrimp with hot chile sauce, Tritip bulkogi, nasu shigiyaki, etc.

Tonight I made Shinho's favorite Korean stew, Yukke jiang. It is supposed to be very spicy, but I made it less spicy so that you can taste the sweetness of leak.

Albacore Sashimi

 
This morning Shinho went to Port Orchard to get sashimi grade tuna from the fisherman. He comes to Port Orchard every year just for two days to sell frozen fillet of tuna which he caught by himself and freeze them on the boat. It was very good, almost like toro and melt in your mouth. I wish he comes more often.

Cod Tempura

 
You might think Japanese food is light and healthy, but Japanese deep fry many things. Tempura, karaage, tonkatsu, korokke, kushi katsu. They all taste good and not so greasy or heavy.
I deep fried Cod and served with daikon oroshi, scallion and tempura sauce.

Ume Shiso Tonkatsu

 
 
This is a delicious summer recipe. You need thin sliced pork for this recipe. Spread one or two sliced pork. (lightly salt and pepper) Smear a little bit of umeboshi (pickled plum), then put the shiso on top of the pork, and roll it. Coat it with flour, egg wash and panko. Deep fry it in medium high heat.










Next one is niratama, nira leek and egg stir fry.

Light Dinner

 
 
 
We went to Peter's sushi place, TENGU for lunch with Paul, Jane and Mrs. Kitasako. The sushi was delicious and we ate a lot. So, it was a light dinner tonight.
Scallion pancake (pajong), spicy Asian coleslaw, spinach with natto, cucumber and seaweed salad. Shinho got clams yesterday, so I made clam miso soup.

Seafood Japanese style

 
 
The first dish is Sumiso Ae, clam and scallion salad with miso dressing.

















The next one is Cod with ginger and scallion. Spread a sheet of aluminum foil and put a slice of cod, sprinkle some salt and put a lot of julienne ginger and scallion on top of the cod. sprinkle sake and soy sauce. Wrap the fish and bake in the oven for 25- 30min.

Salmon and Menchi Katsu

 
 
 


For the last night dinner with Koji and Kim, we had ceder plank smoked salmon, glass noodle salad, spinach frittata and roasted cauliflower. We had wonderful three days. Glad to see Kim is doing very well and they both looks very happy.

















Tonight I made menchi katsu (panko breaded beef patty).

Halibut and Shiso Tempura

 
 
 
Koji and Kim are home. They both like Japanese food,so I made shiso and tofu tempura, pan roasted halibut with citrus soy sauce and vegetable dishes like sunomono and ohitashi.
We all enjoyed both food and conversation a lot.

Cod with Lemon Caper Sauce

 
The sauce is similar to picata sauce. Butter, lemon, caper and white wine.
A friend of ours gave us home grown Japanese eggplants and a cucumber. Char grilled eggplant (yaki nasu) with grated gignger and bonito flake is typical Japanese summer dish and is very refreshing.

T-bone Steak

 
This was a big steak and easily feed three of us. Mom and I shared tenderloin part. Shinho had the rib part. Vegetables are green beans with sesame dressing, potato salad, spicy coleslaw and roasted cauliflower.

Rock Fish in Spicy Sauce

 
I found rock fish in my freezer and it was going to expire. I think it better to cook with something strong flavor. I made sauce with minced garlic, ginger, scallion, rice vinegar, soy sauce, sake, brown sugar and a little bit of red chili pepper. It came out pretty good.

All Asian

 
Main is Chinese, shredded pork and green bell pepper. Two of side dishes are Japanese, scrambled tofu with vegetable and deep fried eggplant in tempura sauce. I also made two Korean sides, spinach namul and spicy cabbage.

Hamburger with Daikon Oroshi

 
In Japan we eat hamburger without bun. It is more like individual meat loaf as we add sauteed minced onion, bread crumb and egg to ground beef (often combination of beef and pork). I put grated daikon radish (daikon oroshi) on the hamburger and poured tempura sauce over. That makes hamburger taste light and refreshing, I think.

Oyster and Tuna

 
 
Shinho bought oysters on the way home from Grayland yesterday. He stopped at Westport to explore the town and found oyster farm. They were very good. The best oyster I have had here so far. Wonderful appetizer.

Today's main dish was tuna steak with wasabi avocado salad.

Mostly Vegetable

 
 
 
I used up most of the vegetable I got from my friends, but I still have some.
The celery has beautiful dark green leaves like I have never seen at the grocery store. Less than a half part is stems. I wanted to use beautiful green. I chopped it and sauteed with bacon and seasoned with soy sauce and mirin.


Next one is broccoli with beef.





The last one is zucchini scrambled egg.

Korean Dinner

 
 
Today's main was Bulgogi (Korean barbecue beef). I used thin sliced tritip. (I love my food slicer.)Bulgogi tastes best if you grill the meat on the charcoal grill. At home pan fry is the easiest way to cook the meat.





Side dishes are nira leak pancake, spinach namul, green beans with sesame sauce, marinated sesame leaves and kimpira gobo.
